Growing up we always had Sunday dinner on Sunday. Makes sense right? :) I honestly don't know how my mom did that almost every Sunday. Sunday's for me are very busy with Church at 11:00 that means we get home around 2 and we are all STARVING!!! Especially my poor two year old. So no one wants to wait around for me to make a big dinner!
So I have recently decided that Sunday dinner on Sunday just doesn't work for my family! So I am trying to have "Sunday" dinner on Wednesday nights instead. Last night was the first time I've made a roast in a very long time! It was delicious! And...i think it was the best gravy I've ever made in my life!!!
This is what a traditional Sunday dinner consists of in my family:
Roast
Mashed Potatoes
Yorkshire Pudding
Gravy
Vegetable
What is Yorkshire pudding you ask? It's only my favorite part of Sunday dinner!!! It is an English thing that my grandma taught my mom how to make, and ever since then we have Yorkshire Pudding with every roast beef dinner! YUM
Here are my recipes that my mom taught me:
Roast Beef
1 3lb chuck roast
1 onion chopped
1 T of garlic chopped (this is my addition and i love it)
6 beef bouillon cubes
Salt
Pepper
Water
To get the best flavor, cook your roast in a pot like this. I have cooked roasts in my crockpot and they just aren't as flavorful.

In your roasting pan, place your roast in the middle and add your chopped onion, garlic, bouillon cubes, lots of salt and pepper, and then fill it up with water so that the water covers the roast by about 1 inch.
Place in a preheated 325* oven and cook for 6-7 hours...depending on how big your roast is. Remove roast from pan and cover with foil! Don't throw away the juices, you need these to make your yorkshire and your gravy!!!
Mashed Potatoes with a twist
8 large potatoes, peeled and cut into pieces
1 package of cream cheese
1 cube of butter
1 cup of sour cream
Salt and Pepper to taste
Peel and chop your potatoes and bring them to a boil in a large pot. Boil until fork tender. Drain your potatoes. Add in the pot cream cheese, butter and sour cream. Blend until creamy and add salt and pepper to taste.
Yorkshire Pudding
4 eggs
2 cups milk
2 cups flour
Roast Drippings
Mix all ingredients together and put in a bowl to chill in the fridge while your roast is cooking.
After you take out your roast from the oven to rest, this is when you want to cook your yorkshire.
In a 9x13 pan place about 3 tablespoons of roast drippings in the bottom. Take your batter out of the fridge and stir it before pouring it in your pan. Pour mixture in your pan and then bake at 425* for 30 minutes or until it starts to brown on top. I love to drown my yorkshire with gravy... as you can see in the following picture!

MAJOR YUM! I LOVE THE CROCKPOT FOR SUNDAY dinner. Throw it all in in the morning... get ready for church then when you walk in 3 plus hours later the house smells heavenly. I call in LINNER (lunch/dinner since you eat like at 4:00) Take off church clothes, set table, eat, crash and sleep. HA! JGG
