Creamy Chicken and Wild Rice Soup

Fall is in the air at our house and I have been making soup every weekend! I'm sure there will come a point when my family will be boycotting soup, but for me it's something I could eat all year round. 
Plus this soup has two of my favorite foods:

Rice & Chicken

You really can't go wrong with that combination. 

My sister introduced me to a Chicken and Wild Rice Soup recipe last year and I was hooked.  I stuck to the original recipe for the first time, but as I've made it several times I made some changes and made it my own.  It's a semi-crockpot meal, which I love and it makes your house smell amazing! 


3 boneless skinless chicken breasts
6 cups water
1 onion diced
2 garlic cloves minced
5 chicken bouillon cubes
1 box of Uncle Bens Wild Rice (quick cook)
1 cup shredded carrots
3 cups milk (you can definitely use cream or half in half to make it a richer soup)
3 tablespoons cornstarch
Salt and pepper to taste.

In crockpot place chicken, water, onion, garlic, and bouillon cubes.  Cook on low for 6 hours.  At six hours add in carrots.  (I like to add in the carrots towards the end of the cooking time because other wise they get really mushy)  Let that cook another hour in the crockpot.

About a half hour before serving, cook rice according to package directions.  Take your chicken out and shred it.  (***save your liquid that is in the crockpot!!) In a big pot, dump your shredded chicken, and liquid and two cups of the milk and bring to a simmer. (If a lot of your liquids evaporated while cooking, just add chicken stock or water with a couple more bouillon cubes)

In a separate bowl, combine 1 cup of milk with 3 tablespoons of cornstarch to make a slurry.  Add this mixture to your soup to thicken.  Add in your cooked rice and bring back up to a simmer.  Simmer for about 15 minutes.  Your soup will thicken even more as it sits because the rice soaks up a lot of liquid.  I like to serve my soup immediately.

I made this for dinner on saturday and it really hit the spot.  I whipped up a batch of homemade bread so I could dip it in my soup.  It was scrumptious!  There is nothing like eating homemade bread and some homemade soup on a cold fall day!

There are 3 cups of milk in the recipe ingredients, but it only uses 2 cups in your directions. When do you add the other 1 cup? Looks like a delicious recipe - can't wait to try it out@@
